Instructions
  1. Pat the pork belly dry and season on both sides with salt and pepper
  2. Heat a frying pan on medium-high heat and add 1 tbsp olive oil
  3. When the oil begins to smoke, add the pork belly
  4. When the pork belly detaches from the pan, flip it
  5. After 1-2 min, add in the mushrooms and the cherry tomatoes
  6. Season with salt to taste and stir frequently for around 5 min (until the mushrooms wilt)
  7. Add the heavy cream and stir for 2 min until reduced
  8. Serve and enjoy!
Recipe Notes

For less calories, drop the heavy cream or replace it with a fat free version.

For less carbs, skip the cherry tomatoes or replace the shallot with garlic. The taste will be different but still delicious since garlic goes great with both pork and mushrooms.
