Ingredients
Instructions
  1. Pat the pork belly dry and season with salt and pepper on both sides
  2. Heat a pan on medium-high heat and add 2 tsp olive oil
  3. When oil starts fuming, add the pork belly
  4. When the pork belly detaches from the pan, flip it
  5. After 30 seconds add shallot
  6. After 1 min add the Brussels sprouts
  7. Stir in the sweetener
  8. Mix in the butter and the bay leaves
  9. Season with salt to taste
  10. Add the beer and let evaporate
  11. Cover with a lid and cook on medium heat until the sauce is reduced
  12. Season with black pepper
  13. Serve and enjoy!

You can replace beer with wine or vinegar (especially apple cider).

You can replace the sweetener with applesauce.
