Instructions
  1. On low-medium heat, cook the clove of garlic and the chopped leek in 3 tbsp of olive oil for around 10 min (the leek will wilt)
  2. Throw in the sausage
  3. When the sausage is cooked, add 1/4 cup red wine and let evaporate
  4. Add the tomato puree which you have previously diluted with some water
  5. Cook until the sauce dries up
  6. Add salt to taste
  7. Stir in the mushrooms and cook until all water is dried up
  8. Add pepper and thyme to taste
  9. Remove from heat
  10. In a big bowl, mix ricotta and parmesan cheese
  11. Stir in the sausage and mushrooms mix
  12. Stir well to mix and serve
