I love to try to invent new ways to prepare eggs.

They are such a versatile food!

Today I show you a quick and delicious recipe to prepare eggs.

It takes a few ingredients, adds some fibers, and it’s plain tasty!

Instructions
  1. Boil/steam cauliflower and set aside
  2. Add 2 tsp of olive oil to a warm pan over medium-high heat
  3. Add 1 clove of garlic
  4. When the garlic is brown, add the peeled tomatoes
  5. Cook for 5 min (add water if dries up)
  6. Add the cauliflower, season with salt, and stir
  7. After 2 min, make "wells" in the sauce and crack 1 egg in each well
  8. Cover and cook on medium-low until the eggs are done to your taste
  9. Serve with black pepper and enjoy!
Variations & Substitutions
  • Sprinkle oregano on top
  • Top with cheese of your choice
